Royal Cafe is famous for it’s Basket Chaat and mouthwatering fast foods and Indian, Chinese, Continental dishes both veg and non-veg. The basket chaat or tokri chaat is a famous chaat made up of grated potatoes which is deep fried to make a crispy fried Basket/Tokri base for the chaat. This basket is then filled with lots of ingredients like the mixture of Aloo Tikki, Papdi, Bhalle, Matar, Dahi, Saunth Chutney (Tamarind Mix), Green Chutney (Dhaniya Mix), Sev, Boiled Potatoes, Fresh Anardana Seeds, Chaatmasala, Dhania Powder, Red Chilli Powder, Amchoor, Jeera Powder etc.

Hardayal Maurya or Chhotu Bhaiya or Chotu Chaatwala is not the Chaat King of Lucknow or India, but is a Chaat King of the World. Hardayal Maurya or Chhotu Bhaiya is also credited as the famous creator of Basket Chaat of Royal Cafe. Hardayal Maurya is Head Chef and chaat expert at Royal Cafe, Hazratganj, Lucknow. He was MD of Maurya Hospitality Management’s Lucknowi Chat Private Limited, that was registered at Pune, Maharashtra address in 19 July 2001. The company is now Strike Off from the Registrar of Companies, Pune. According to his bio mentioned in his Facebook page, he is married and has been associated with Royal Cafe since from 1992.
